Pumpkin / Carrot / Sweet Potato Spice Bread

Dry Ingredients:

1 c. Brown Rice Flour or Millet Flour

1/2 c. Soy Flour or Fine Corn Meal ( or an additional 1/2 c. rice flour )

1/2 c. Tapioca Flour or Arrowroot

1 tsp. Allspice or 1 tsp. Cinnamon and 1/4 tsp. Ground Cloves

1/2 tsp. Nutmeg (optional)

1 tsp. Ginger (optional)

2 tsp. Baking Powder

1 tsp. Xanthan or Guar Gum

1/4 tsp. Vitamin C crystals (optional)

Liquid Ingredients:

1 c. Canned Pumpkin or 1 c. Pureed carrots or 1 c. Pureed Sweet Potatoes

1/3 c. Honey or 1/2 c. Maple Syrup or 1/4 tsp. Stevia Powder

2 T. Sunflower, Safflower or Corn Oil

2 Eggs or Egg Replacer

3/4 c. Pineapple Juice

Directions: Thoroughly mix dry ingredients in large mixing bowl; set aside. Combine liquid ingredients in food processor or blender. Stir dry ingredients into liquid mixture - don't over mix. Pour into an oiled 5" X 9" loaf pan and bake at 350 degrees for 45 - 50 minutes.
